Granby Board of Health Flags Septic Design Gap, Defers Restaurant Fryer Permit

GRANBY — April 7, 2026 — Granby Board of Health defers restaurant fryer permit, opens septic design accountability review. At the April 7 meeting, the three-member board conditionally approved a full queue of food-service licenses and a septic repair permit for 72 Chicopee Street — a 1,500-gallon two-compartment tank serving a three-bedroom home — while deferring action on a new frying operation at 172 West State Street after prospective operator Yuko could not yet describe how used cooking oil would move from the fryer to off-site collection. "If we just give you a permit, tomorrow afternoon you could pour the oil in and say, I don't know what I'm going to do with this," board agent Dick said. The board also opened a broader review of whether licensed engineers are properly directing the septic designs they stamp, after sanitarian Alan Weiss presented highlighted Title V language arguing that the stamping professional — not an unlicensed soil evaluator or drafter — must be the designer of record at board meetings and on certificates of completion; Dick said he will research the regulation and speak with the two designers whose work most frequently comes before the board before the May 5 meeting.
